Day 3
This is a super easy recipe to whip together. It is the only banana bread recipe I will use. It is great for a loaf of sweet bread or bake as muffins. It is totally up to you to how you want to bake it. If you choose to bake as muffins, bake at the same temperature as the loaf bread but only bake starting at 25 minutes. Check before removing from the oven to be sure they are done.
Ingredients
- 3 to 4 well ripened bananas
- 1 c sugar (I use sugar cane granulars)
- 1/4 c butter (I replace with coconut oil)
- 1 egg
- 1 tsp vanilla
- 2 c flour
- 1 tsp baking soda
- smidge of salt
- 1 tbsp flaxseed (ground)
- walnuts (optional)
Directions
Preheat oven to 325 degrees. Cream together bananas, sugar, egg, butter, and vanilla. Sift flour, baking soda, flaxseed and salt together and add to bananas. Sprinkle with walnuts before baking. Bake at 325 degrees for 1 hour.

The past 15 years have been wrought with many struggles for various reasons, but it is as a result of those struggles that this blog has come about.
As the years passed and the struggle kept coming, I would say to God, "I'm not sure why we have to go through all of this, but if we have to God, then allow my story to serve as a means of encouragement to others so all this pain isn't for nothing."
Well, the years passed but the struggles never went away. I feel now is the time God wants me to begin sharing my story. It is my prayer as I share my heart that it will serve as a healing opportunity for you, my readers. Know you are not alone. There are hope and encouragement that waits.
