I made with sautéed onion, peppers of every color, kale, and steak. Topped with diced tomatoes, queso cheese, sour cream. Serve on a bed of lettuce, tortilla chips, or on soft taco shells.

We Survived The Week

Today is the day where we should be able to rest from the craziness of the week.

I know for many of us, however, today is the day in which we try to catch upon our house chores, the dishes, the laundry, the grocery shopping, and the kids youth activities, but I want to remind you of the importance to make some time to rest in order to refresh your mind, body, and soul.

God reminds us how important this is or He wouldn’t have it in the Bible.

“Come to me, all you who are weary and burdened, and I will give you rest.” Matthew‬ ‭11:28‬ ‭NIV‬‬

Consider this, My Friend. You will not regret it. Give your body and your mind this much needed down time.

Finding Your Lost Joy

Is there something you like to do or something you enjoy but find you wait for someone to invite you because you would have not thought to do for yourself?

This how I feel about flowers. I love how a fresh bouquet of flowers can brighten up a room, but have never thought to buy them for myself.

I am not sure why I have always thought I couldn’t have them unless someone bought them for me, but I have sacrificed this joy my whole life.

Have you done this in an area of your life? Is there something that brings you joy that you sacrifice because you never thought to do it for yourself?

Today’s encouragement is a simple one. Do something today that you enjoy, but never thought to do for yourself.

I can be as simple as buying yourself a fresh bouquet of flowers or as difficult as going to your favorite restaurant alone to eat a meal you have always wanted to try or to go see a movie you have been wanting to see at the movie theater.

There is truly nothing wrong to do something you enjoy because you do not have to wait for someone else to fill this form of joy for you.

Crab Bombs

This is a really easy recipe I made for my family last night. If you like seafood and crabs, then this is a must to try.

I am “Keeping It Real” by sharing my not so pretty image of my first ever made Crab Bombs. My family liked them so I will be making these more often and hopefully the more I make them, the prettier they will look.


1 lb. Crabmeat

1 Egg, beaten

1 cup Ritz Crackers, crushed

1 tsp. Yellow Mustard

2 tbsp. Fresh Lemon Juice

2 tbsp. Fresh Parsley, chopped

1 tsp. Old Bay Seasoning

1 tbsp. Worcestershire Sauce


Place crabmeat in a mixing bowl, picking any stray shell fragments out. Add crushed crackers, Old Bay Seasoning & parsley to the crab.

In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce. Whip with a whisk until smooth.

Pour egg mixture over the crabmeat and crackers and gently mix careful not to break up large lumps of crabmeat.

Mold into golfball sized balls and place on a cookie sheet.

Bake @ 350 degrees for 30 minutes. Drizzle w/ melted butter and allow to cool.


This is what I paired my Crab Bombs with; shrimp, stuffed mushrooms, green beans, and grapes. It was a filling but light healthy meal.

Homemade Chicken Noodle Soup

Soup Made Out of Leftovers

Are you looking for an easy recipe to make with left over chicken and spaghetti noodles?

This soup recipe is an easy one and great for a lunch or a supper on a cold rainy or snowy day.


Left over chicken (or fresh) (amount is your preference)

Left over spaghetti noodles (or fresh) (amount is your preference)

Carrots (match box sticks work best) (amount is your preference)

1/2 onion diced

1/2 tsp garlic salt

1 tsp parsley

3 cubes of chicken broth with 4 cups of water (or) 4 cups of liquid chicken broth


In a medium sauce pan on medium heat, add either the water with bullion cubes or the chicken broth to the pan. Cut up chicken into small pieces then cut spaghetti noodles into soup sized pieces. Add a handful of carrots into the broth as well as all the seasonings and onions.

Allow to cook until the carrots are soft for approximately for 20 mins.

Turn down to simmer and serve warm.

Serve with either a baguette, chips, or crackers.

Do Not Forget “You” While Encouraging Others

Today is to encourage those who love and support your chronically ill family and friends.

Do you have a loved one or a dear friend who is struggling with the physical effects of a chronic illness or pain?

Do you watch them while you find yourself struggling with experiencing the frustration of not being able to help?

Do you struggle with wanting to cry because of the constant pain they are in?

Does the darkness of the day, your pillow or your shower know the hidden tears you have shed?

Have you run out of encouraging words to share because everything you say is found to be redundant?

Do you know the pain and frustration of letting others down when your plans change because your loved one is not well or strong enough to go?

Have you lost friends because they do not understand the loyalty you have to your sick loved one?

How many times have you sat in a hospital emergency room or doctor appointment and you feel alone while you hold the hand of your sick family or friend?

My friend, please know you are not alone. There are many people who know the pain of loving and supporting a chronically ill loved one.

It is important to remember, it is healthy to reach out to those family and friends who will lift “you” up in prayer.

I have included a list of specific prayers you can ask your friends to pray for you.

    Request prayer for God to hold you in His loving arms while you hold your sick loved one in yours.
    Ask them to pray for the loving words of encouragement, strength, and comfort you can share with your loved one while supporting and encouraging them.
    Ask for the wisdom you need in order to ask the difficult questions that they will not think to ask for themselves.
    Lastly, ask for the strength to fight for the care for your loved one if the doctor is a difficult and unsympathetic one.

It is important to know, it is not selfish to ask for emotional and physical help for yourself while you take care of your loved one. It is important to do this because you can not serve, encourage, or support others from an empty vessel.

This is a tough, long, and difficult journey you are on if your loved one has an ongoing health crisis or is experiencing regular chronic pain. This situation is not going away after a week or ten days. It is one which continues on for weeks, months, and years ahead,

You will not have the physical stamina, no matter how hard you try, to sustain this without the physical and emotional support of others who love you. You need them and their prayers to keep moving forward and pushing past the exhaustion you feel on a regular basis.

My friend, please do not be afraid to lean on your circle of friends or your encouraging groups to seek this help for yourself. When you do, you will experience a spiritual renewal and refreshment that is needed for your spirit and soul. This refreshment and renewal will enable you to keep going as you continue to travel this journey with your loved one.

Remember this… you are important and you are… enough! Do not forget to take care of “you” while you take care of your loved one.

Cheesy Crackers

This recipe was altered to my family’s needs, but the original recipe was from, which was credited to a recipe in The Lee Brothers Southern Cookbook.


2 c flour (plus extra to flour surface with)

1/4 c ground flax seed

3/4 tsp garlic salt

1 tsp dried parsley

2 tsp dried pepper flakes

8 tbsp coconut oil

2 c finely shredded Italian blend cheese

1 c shredded pepper jack cheese

4 tbsp almond or cashew milk


Preheat oven to 350*.

Put everything except the milk into a food processor. Pulse the processor, 5 seconds at a time, for about 5-6 times, until the dough is in coarse crumbs.

Add the milk and process until the dough gathers together into a ball.

Roll the dough out on a floured surface with a rolling pin that has been floured until it is about a 1/8 of an inch thick.

Cut the dough into 1-inch squares with a sharp knife or a pizza cutter. You can put a bit of flour on the blade of the knife to keep it from sticking.

Place the crackers at least 1/4-inch apart on parchment paper or on a nonstick cookie sheet.

Bake for 12-15 minutes until the edges are just starting to brown. (13 minutes works best for me).

Put the baking sheet on a rack and let the crackers cool completely.

Eat immediately or store in a covered container and eat within a day or two.

Caprese Chicken, Fresh Green Beans, and Fresh Bruschetta

Just for laughs, my Kiddo gave me an ”A” for presentation tonight.

What you do not know is I really do not like cooking main meals. They are burdensome to me and very boring. I love baking and place more emphasis on presentation with that, but I do not care what my main meals look like. I am just happy to have it all made for another night.

Caprese Chicken


I used a wheat French baguette for my bread to put the delicious bruschetta on. A side note, I added a little shredded Italian cheese to mine as my family loves this added feature to my bruschetta.

Fresh Green Beans

I also served my meal with fresh steamed green beans and sprinkled with a little garlic salt and dried parsley.
