1 package of chicken fillets, cubed
1 head of cauliflower, riced
Salt to taste
Parsley to taste
In a sauté pan on medium heat, cut up chicken fillet into cubes and cook. When chicken is half way cooked add riced cauliflower flower to chicken and stir often to keep from over cooking or making cauliflower mushy.
(If you use a head of cauliflower, you can rice it by placing in a food processor a little at a time on the pulse setting).
Serve with a side of baby carrots and sprinkle parsley on top.
